Pasta salad always brings back fond memories of my childhood home. With our family it was not just a side, but the WHOLE dinner. We often sat outside around the swing and enjoyed the warm weather and each other's company. More recently I have eaten it at numerous potlucks or barbecues especially between Memorial Day and Labor Day. It is one of my favorites because it is so simple and variable. You can put in whatever meat, cheese, and veggies you have on hand or what you know will please your guests. This particular one is a bit more Mediterranean because of the olives and salami, but ham or turkey would work fine too. I recommend black olives and other colored peppers as well. Cubed sharp cheddar adds a lot of flavor and fun to the dish. If there is a particular veggie you aren't fond of, simply leave that one out. If you make up a large batch that you'd like to use for a few days I recommend not mixing it up until you are ready to serve it as some veggies may get soggy. You can also use any sort of dressing instead of the traditional Italian one. So for hot summer days or Labor Day this Monday..serve up a light, refreshing dish that's sure to please. Ingredients: 1 pound package of pasta 1/2 block of cheddar cheese 7 to 8 olives Green pepper 5 to 6 cherry tomatoes 5 to 6 salami slices 1/2 of a cucumber Boil pasta according to instructions on package. Drain and rinse with cold water when done boiling. Chop cheese, and cucumber into tiny cubes. Slice olives, salami, and tomatoes into tiny bite-sized pieces. Combine everything into a bowl and mix with Italian dressing. Mix, serve, and enjoy!

Delicious caramelized onions sounds redundant to me, but that's how they taste-DELICIOUS! It's easy to make, but you need a bit of patience to get this done right. Some videos or websites will tell you that you can get this done in 10 minutes. I don't see how, but let me know in the description if it's possible. Please check out this easy way to caramelize onions then like, share, and subscribe! Ingredients: Sliced onions 1/4 tsp olive oil (optional) Slice onions and put on low heat for 45 minutes. Add oil if onions stick to pan. Stir once in a while. Serve on anything and enjoy! My life was revolutionized when my Canadian friend first taught me about putting chocolate chips in banana bread! It takes the regular banana bread from being boring and not so popular to being an immediate fan favorite! This particular recipe has been a hit at church potlucks, mom group brunches, and even with my picky 3 year old. It is a great way to use up bananas that have gone soft or brown. I also tend to freeze them if they get this way but I'm not quite ready to use them. Then i simply put them in some hot water, skin on for a bit to defrost them. Once soft again I cut off the tops and easily squeeze out the banana into my batter. (Also an easy way to do smoothies). Make sure to grease your pan well so that you don't lose any of that banana bread goodness! With our pan and oven it took about 70 minutes to bake. I sometimes cover it with foil if I think the top is getting too brown. Check it with a knife to make sure it isn't gooey on the inside. We like this for breakfast or brunch...toasted with butter, but with the chocolate chips it could even pass as dessert. Enjoy it with coffee or just a cup of cold milk! Ingredients: 3/4 cup sugar 1/2 cup margarine 2 eggs 2 soft bananas 1/3 cup milk 1 teaspoon vanilla extract 1 teaspoon baking soda 2 cups flour 3/4 cup chocolate chips Cream sugar and margarine. Add eggs, extract, milk, baking soda, bananas, flour, and chocolate chips. Mix well. Oil bread pan then pour in mixture. Bake at 350 °F for one hour. Cool 5 minutes. Slice and serve with your favorite coffee. You can make a healthy breakfast wrap quickly with this recipe. Wrap the tortilla around your eggs and you have yourself a breakfast burrito. Dump the wrap if you're looking for a keto friendly breakfast. However you serve this great breakfast, you're mouth will be watering to the last bite! Ingredients: 4 eggs 1/2 onion 1/2 tomato Spinach Salami Mushrooms 1/4 cup milk Dice tomatoes, mushrooms, and onion. Chop salami. Heat salami, mushrooms, and onion in a frying pan until brown. Mix eggs and milk thoroughly in a bowl. Add eggs to frying pan after heat is set to low. Mix to desired consistency. Add tomatoes and spinach for 1 minute. Serve and enjoy! Don't throw away that leftover coffee! Keep it in the fridge and use it to make a great tasting shake later in the afternoon! It's like making your own frappe for just a fraction of the cost. If you don't have a shake mixer, then you can use a blender to make your own coffee milkshake. Try out this recipe and I guarantee you'll want to make more! Ingredients: 3 to 4 scoops ice cream 1/4 cup strong coffee 1/4 cup milk 1 teaspoon vanilla extract Mix everything into a blender and blend for about 1 minute. Add more ice cream for a thicker shake. Enjoy! The best breakfast involves well made eggs. With this easy technique, you will be able to make perfect soft boiled eggs every time. The key to a perfect peel is to run your egg under cold water before AND as you peel. A crunchy piece of toast, and some strong coffee will accent your eggs well. Try this recipe and let me know how you liked it. Enjoy! Ingredients: Eggs Salt Pepper Fill saucepan with enough water to cover your eggs. Boil water WITHOUT eggs. Add eggs gently. Remove after 6 minutes. Drain hot water. Run egg under cold water as you peel. Serve and enjoy! |
