Kids love play dough (whether it's the name brand stuff or not). My mother-in-law, in all her wisdom, made some play dough for my 2 year old to distract him while his mother would feed our newborn. Biscuits topped with meat and cheese...genius! They're called barbecue muffins because the brown sugar and ketchup give a nice bbq flavor, but categorizing them as a cheeseburger cup can work too. You can make your own biscuits for that true homemade feel, but you won't lose any points for using store bought. The genius of this recipe is that you can use any type of meat for these barbecue muffins. Take a peek at this video if you're interested in how to make barbecue muffins. Ingredients: Buttermilk biscuits 1 pound ground beef 1/2 cup ketchup 2 tablespoons brown sugar 1 tablespoon apple cider vinegar 1 teaspoon chili powder Cheddar cheese Brown 1 pound of ground beef Add ketchup, brown sugar, apple cider vinegar, and chili powder Cook 5 to 10 minutes on medium heat Line muffin tins with buttermilk biscuit dough Add meat Top with cheddar cheese Bake at 375 degrees Fahrenheit for 20 minutes First created in 1896 at the Waldorf hotel in New York City (thank you Wikipedia), the Waldorf fruit salad (or just Waldorf salad) has been a popular item at many high-brow gatherings. Traditionally the Waldorf fruit salad contains grapes and celery. This version, however, does not due to lack of both ingredients. Regardless this was a tasty treat made by my mother-in-law when guests came to visit. Try this quick and simple recipe the next time you feel like you want to be part of the 1% for at least one meal. Enjoy! Ingredients: Cube 3 to 5 apples 1/4 cup raisins 1/4 cup mayonnaise 1 dollop sour cream Add marshmallows (mini marshmallows are preferable) 1/2 cup crushed walnuts 2 celery stalks chopped Drizzle some honey I LOVE a gyro sandwich. The mixture of lamb and beef mixed in with a few spices just makes my mouth water for that succulent Mediterranean dish. Growing up as a kid I went to a great burger place called Jeff's Red Hots where they served the perfect Gyro Sandwich I've ever had. Since then I've been wanting to make my own homemade gyro meat, and now I've done it! I wish I didn't wait so long to do this. It was fantastic. I didn't have a rotisserie, but by baking and then frying I was able to mimic the way a gyro is cooked. If you've ever had a gyro or some form of kebab, then I'm sure you had tzatziki served with it. It is such a tasty, creamy sauce that adds another level of texture to your meal. You can also use it as a dip for pita bread (check out my previous blog from 9/13/17). If you want to make tzatziki sauce, you'll definitely need some Greek yogurt. Ingredients: 1 shredded English Cucumber 1 teaspoon of salt Add salt to cucumber and set aside 10 to 15 minutes Then drain water through paper towel Drain as much water as possible 1 1/2 cups Greek yogurt 1/2 cup sour cream 2 to 3 tablespoons olive oil Salt to taste Black pepper to taste 2 teaspoons minced garlic Juice from 1/2 lemon 3 to 4 tablespoons dill Mix well Cover and refrigerate for at least 3 hours Top with more dill Pita bread has its origins somewhere in Western Asia, and has been a popular form of bread ever since. Try it with some hummus, tzatziki, or any form of dip you like. Slice it and toast it to make your own batch of pita chips. Cut it down the middle and you have the beginnings of your own pita sandwich that you can fill with falafel, gyros, or some type of kebab. With a little yeast and some high heat you can make your own pita pocket with this recipe. At the local Indian store near me you can buy 10 pitas for $1.00, but you spend much less if you learn how to make pita bread. Ingredients. To activate yeast: 1 cup flour 1 pack dry active yeast 1 cup water Mix together, then let sit 15-20 minutes until bubbles form To make bread: 2 tablespoons olive oil 1 1/2 teaspoons salt 1 1/2 cups flour Mix together Slowly add 1/2 cup flour if dough sticks to bowl Then knead 5 to 6 minutes Oil dough with 1 teaspoon olive oil Cover and let sit for 2 hours Cut into 8 pieces Roll into balls Cover for 5 minutes Roll out and flatten Cook on a pan 1 1/2 minutes each side on medium to high heat |
