Using quinoa in any meal is a a great healthy alternative to meat. However it does complement grilled chicken very well. In fact it tastes great with a nice steak also. In any case, this mouthwatering Mediterranean recipe is both healthy AND tasty whether or not you have it with meat. Enjoy! Ingredients: 2 cups quinoa 4 cups water Sliced leeks 1/3 cup olive oil Sliced sweet corn Cayenne pepper Fresh basil 1 lemon Salt and pepper to taste Cubed feta cheese Cook leeks in olive oil on medium heat until they are translucent. Add sliced corn, and cayenne pepper. Boil quinoa in water until you get a soft consistency. Add some olive oil, salt, and pepper to taste. Chop a handful of fresh basil. Squeeze juice from one lemon. Mix lemon with basil. Mix basil with leeks and corn. Finally add the quinoa and mix yet again.
