Maybe it is because it is hot it forces us to slow down and enjoy our dining experience. So why not add a super easy, super cheesy new soup to your repertoire? This broccoli cheese soup only has 5 ingredients and also happens to be vegetarian and gluten free!!! WIN..WIN...WIN! The cheese and heavy cream help to thicken up the soup without needing any flour or cornstarch. You can definitely change this up by adding some bacon or chicken and extra spices, but this is a great base to start from. We only added black pepper as the cheese and chicken broth provided enough salt for the broccoli cheese soup. And if you are like us, you may be looking for some good veggie options that help save you money AND are toddler friendly. As pictured at the end, you can definitely blend this soup up if you prefer a creamier soup or need to "hide" those broccoli florets:) Serve this up tonight with some biscuits (last week's video), but make sure to make a lot because this soup tastes even better the next day! Ingredients: Put 3 teaspoons minced garlic into a saucepan and cook for 1 minute on medium heat Mix 3.5 cups chicken broth with 1 cup heavy cream to your garlic Add 4 cups of chopped broccoli florets to the mixture then turn heat up to high Bring to a boil, then simmer very low for 15 to 20 minutes Add 3 cups of cheddar cheese about 1/2 cup at a time. It takes some time, but the result is a meal that will last for a couple days. You can serve it without the roux, but it adds so much to your soup's substance. Ingredients: For the soup... 4 cups diced potatoes 2/3 cup celery 1 chopped onion 3/4 cup leftover ham 3 cups water 3 cups chicken broth 1 cup chopped carrots Put ingredients into large pan Set heat to medium and cook until soup boils Then add 1 teaspoon chicken bouillon and 1 teaspoon pepper Simmer until potatoes are soft For the Roux... 5 tablespoons butter 8 tablespoons flour 3 cups milk Stir in medium heat until it thickens (4 to 5 minutes) Add 2 cups cheese (your choice) Pour roux into soup and mix Mash potatoes Serve and enjoy! |
