Asparagus has always seemed like a vegetable only the upper class gets to eat. Don't ask me why I've felt that way, but maybe it's because it seems fancy or daunting to cook quite right. Well I have since changed my tune. All you need is a pan and some very basic, tasty ingredients. Who doesn't love vegetables cooked with butter, garlic, and Parmesan? The key to this recipe is not letting your heat get too high or you will burn the garlic sauce. I also recommend checking your asparagus along the way so that it is cooked to your liking. So broaden your vegetable horizons this spring as you make plans to be fit for summer and add asparagus to your cooking repertoire. Who's looking upper class now? Ingredients: 1 pound of asparagus 3 tablespoons butter 1 teaspoon coarse salt (or sea salt) 2 tablespoons olive oil 1/4 teaspoon black pepper 3 teaspoons minced garlic First melt your butter in medium to high heat. Add oil, salt, pepper, and garlic and cook for 30 seconds. Add the asparagus and fry for 7 to 8 minutes. Remove from heat, and top with Parmesan Cheese.
