Thankfully you don't have to be Swedish to make or enjoy this scrumptious brunch option. We first ate these pancakes with my husband's best friend who actually is Swedish. They are a lot easier to make than I had originally thought, even easier than regular pancakes! But there's even more fun....with the toppings. Real lingonberries are the most legit, but if you don't have any....jam or other berries work well too. Nutella is a hit with just about anyone and since they roll up nicely, they actually travel well and are a good finger food. If you're feeling some health guilt, throw in some fruit to go with it. Our other creations included....peanut butter and banana, cinnamon and sugar, and maple syrup. Later we decided chocolate chips thrown in while still on the skillet would also be delicious. Just make sure to include lots of butter....and sprinkle that icing sugar on top for a professional finish! Avnjuta! Ingredients (makes 5): 2 eggs 1/2 cup milk 1/2 cup flour A dash of salt
