As the pita's middle eastern cousin, the roti serves as a great alternative to rice. This bread goes well with any type of curried foods. I particularly enjoy it with chicken curry as well as ground beef and potato curry. I always looked forward to both meals growing up as a kid. I hope you enjoy this as well! Ingredients: 2 cups flour 1 1/2 to 2 cups water Salt (optional) In a bowl slowly mix in water with flour. Mix to the point that your dough is tacky. Put dough into the refrigerator for 10 minutes. On a floured surface, form round pucks about 2 inches in diameter. Flatten pucks with a roller. Place dough on a griddle, or large pan. Cook for one minute then flip over. Flip over again and your bread should start to rise almost immediately. Flip over one more time for about 30 seconds. Remove from pan and serve!
