My mother (from the Philippines) has been making empanadas for decades. I've grown up with them and love them. This version uses ground beef. She prefers to fry them (which are INCREDIBLE), but I like baking them. I suppose it's a way to eat healthy. Either way try out this recipe and enjoy this great dinner/snack. Ingredients for Filling: 1 chopped onion 1 pound ground beef 1 cubed potato 1 cup water Salt and pepper to taste Simmer covered for 10 minutes, then simmer until water evaporates. Ingredients for Wrapping: 1 cup sugar 1 cup oil 1 cup water Salt to taste Add flour until you get a wet consistency Generously flour your table and knead your dough until it is no longer wet. Brush over empanadas with an egg wash. Cut and roll out wrapping then put on 1-2 teaspoons of meat. Bake at 325 degrees Fahrenheit for 15 to 20 minutes.
