Pasta salad always brings back fond memories of my childhood home. With our family it was not just a side, but the WHOLE dinner. We often sat outside around the swing and enjoyed the warm weather and each other's company. More recently I have eaten it at numerous potlucks or barbecues especially between Memorial Day and Labor Day. It is one of my favorites because it is so simple and variable. You can put in whatever meat, cheese, and veggies you have on hand or what you know will please your guests. This particular one is a bit more Mediterranean because of the olives and salami, but ham or turkey would work fine too. I recommend black olives and other colored peppers as well. Cubed sharp cheddar adds a lot of flavor and fun to the dish. If there is a particular veggie you aren't fond of, simply leave that one out. If you make up a large batch that you'd like to use for a few days I recommend not mixing it up until you are ready to serve it as some veggies may get soggy. You can also use any sort of dressing instead of the traditional Italian one. So for hot summer days or Labor Day this Monday..serve up a light, refreshing dish that's sure to please. Ingredients: 1 pound package of pasta 1/2 block of cheddar cheese 7 to 8 olives Green pepper 5 to 6 cherry tomatoes 5 to 6 salami slices 1/2 of a cucumber Boil pasta according to instructions on package. Drain and rinse with cold water when done boiling. Chop cheese, and cucumber into tiny cubes. Slice olives, salami, and tomatoes into tiny bite-sized pieces. Combine everything into a bowl and mix with Italian dressing. Mix, serve, and enjoy!
