I feel I have definitely reached adulthood now that I can properly make skillet potatoes:) It's just one of those dishes that takes a few tries and some finesse. So here are some tips to help you to achieve this feat. I discovered you need oil and butter and high heat to get your potatoes crispy and keep that great taste. It also takes some patience. Cook your onions until you get that carmelly-look going. Also make sure that your green peppers are your last item as they will get mushy and lose their beautiful color if cooked too long. As for your meat, you can use whatever you have...ham, bacon, kielbasa, or even ground turkey. This can be a great option if you have some leftovers to use up from a baked potato dinner, or like me, you can make extras for such a meal as this. Spices are all up to you! I personally like the southwestern flavor that cumin adds. Finally, fry up that egg to your liking in the same skillet for maximized flavor and top with your cheese of choice. With this hearty start, you're bound to have a wonderful day! Ingredients: 3 baked potatoes 1/2 onion chopped 1 green pepper chopped precooked sausage (or meat of your choice) seasonings of your choice parmesan or cheddar cheese 1 fried egg
