After the holidays or after hosting a large group you may find you have leftover mashed potatoes that need reviving. Here is the perfect recipe for turning that classic into something cutting edge:) It is almost like fried chicken and potatoes all in one bite! The ingredients are simple ones you no doubt already have on hand. And you can get creative with the mix-ins and spices depending on what you are craving. These are meat-free but you could easily include bacon bits or leftover sausage. The outside is super crunchy and the inside is soft, cheesy, and super flavorful. Make sure to fry them when they are chilled or they will fall apart more easily. Enjoy these for brunch, as a new side, or a quick on the go snack. So before you toss those bland potatoes...give them a second life! You won't be disappointed. Ingredients: Leftover mashed potatoes 1 egg Cheddar cheese Flour Granulated garlic Onion powder Cayenne pepper Salt Mix potatoes with all the ingredients. Use 1/4 cup flour with the mixture. Mix and roll into balls, then freeze for about 20 minutes. While waiting mix flour, garlic, onion, cayenne, and salt onto a plate for your pancake coating. Take out potato balls from the freezer and flatten them. Coat your pancakes, then fry on each side until crispy. Remove from oil and dry onto a paper towel. Serve and enjoy!
