In my opinion...cream cheese frosting is the best type of frosting out there. It is smooth, creamy, and not as sugary sweet as others. It is the perfect complement to carrot cake, red velvet cupcakes, or as pictured here...pumpkin muffins. A standing mixer makes this super easy, but a regular hand-held one would do the trick too. Just make sure to scrape the sides of the bowl as you mix. This cream cheese frosting is also very easy to spread and looks professional without a lot of effort. So go ahead and turn those possibly overlooked muffins (or anything else for that matter) into fought-over cupcakes! Happy Thanksgiving!!!
