Add some chicken stir fry with a few veggies and you have yourself some red chicken curry...I may just make that right now! I had it with some Jasmine rice and I was satisfied for the night's meal. For a less spicy peanut sauce use massaman curry instead. You won't regret this tasty treat from the East. I guarantee it! Ingredients: 2 tablespoons coconut oil 2 to 3 tablespoons chopped onions 1/2 cup curry paste 2 cups (about 1 can) coconut milk 1/2 cup peanut butter 3/4 cup water 1/2 cup brown sugar (or palm sugar) A pinch of salt 1 tablespoon fish sauce 4 tablespoons of lemon juice Heat onions in coconut oil until it is slightly brown. Add curry paste and cook 2 to 3 minutes. Pour in coconut milk. Mix in medium heat until paste incorporates into the milk. Add peanut butter and mix until the oil separates. Add water and brown sugar then mix. Finally add salt, fish sauce, and lemon juice and mix until desired consistency is reached. Serve with Jasmine rice and enjoy!
