This three bean soup recipe is a family favorite! It's been passed down from generation to generation. I don't know where it started, but I'm sure that the story is filled with adventure, love, and excitement! You can use ANY type of meat you like (I prefer ground beef), and it's meant to be a quick setup so whatever canned beans, tomatoes, and corn you have will do nicely. You can also add some tortilla chips with sour cream for a nice enchilada soup...or would that be more of a tortilla bean soup? Enjoy this Southwest bean soup recipe now that the weather has dipped down quite a bit. Ingredients: Saute 2 small sliced onion Add 2 pounds chopped chicken breast Cook the chicken all the way through 1 pack ranch dressing mix 1 pack taco seasoning mix 1 can diced tomatoes 3 cans of beans...we used black, great northern, and pinto 1 to 2 cans of corn Chopped green chili 2 cans chicken broth Simmer for 2 hours on low heat Enjoy!
