Hot summer days are here at last! But before you eat ice cream for breakfast, lunch, and dinner....consider some healthier options that can still keep you cool. This yogurt parfait is perfect for any meal, dessert, or snack. If you are rushed in the morning, you can make it the night before in a ball jar as seen here, pop a lid on it, and store it in your fridge overnight. (Just be aware that the granola won't be quite as crunchy that way.) We used plain homemade yogurt so it mixes together a little more, but if you prefer separate layers...go for a thicker Greek yogurt variety. Any fruit or granola works well, so you can customize this to whatever ingredients you have on hand and whatever preferences your family members have. Kids enjoy these too! So save your ice cream for later and go with a healthy, yet sweetly satisfying choice.
